Separate the leaves and roots of the turnips, then peel the roots and cut into wedges.
Combine (A) and soak the turnip roots. -
Parboil the turnip leaves and cut them into 2 cm (3/4 in.) lengths.
Rub them with salt, then lightly rinse and drain. -
Cut the yuzu into quarter slices.

Lightly rinse (1) with water and drain.
Mix together (2) and the yuzu slices, and place in a container or bowl. -
Combine (B) to make the pickling juice, add the turnip roots, then let marinate in the refrigerator for 30 minutes.
