Directions

  1. Mince the onion, place into cold water, then drain and squeeze out excess moisture.
  2. Remove the pulp and seeds from the kabocha squash. Cut into approximately half, then arrange peel-side down on a heat-safe plate and microwave (600 W) for 3 minutes. Quickly mash with a pestle or spatula.
  3. While still hot, add and mix in the soymilk, soy sauce, butter and (1).
  4. Place the almonds into a microwavable mug, and heat in a microwave (600 W) for about 10 seconds.
  5. Serve (3) into small dishes and garnish with (4).
