
Roasted almonds offer a new spin on the popular boiled green beans in sesame dressing, while sliced onion adds crisp contrast for a nutty and refreshing appetizer.

- Trim both ends of the green beans, slice into 3 equal lengths, then boil. Thinly slice the onion.
- Dry roast the sliced almonds, grind a 4 Tbsp portion in a mortar with a pestle until smooth, then add in the soy sauce and mirin.
- Add the green beans and the onion to (2), and combine well. Coarsely chop the remaining almonds and sprinkle on top.
