Directions

  1. Douse the aburaage with boiling hot water to remove excess oil. Cut in half lengthwise, then into 5 to 6 mm (0.2 in.) wide strips.
  2. Place (A) into a pot over medium heat. Once boiling, add in the aburaage and simmer for 1 to 2 minutes. Next add in the bean sprouts and simmer for a further 1 to 2 minutes.

Since these days high-quality cooking oils are used for deep-frying, it is not always necessary to remove excess oil. However, remove excess oil if there is an odor, and when you want the tofu to thoroughly soak up flavor.
