  1. Cut the chicken into large bite size pieces, soak (A), cover in potato starch.
  2. Fry (1) in cooking oil. They will stick together, so fry one piece at a time.
  3. When crunchy, shake off the oil. Lay out red leaf lettuce on a plate, and pile on fried chicken.
