Directions

  1. Rinse the rice and set aside in a colander for 30 minutes.
  2. Scrape the skin off of the burdock root, shave off into thin pieces and then place in water. Peel the carrot and julienne into 2 cm (0.8 in.) long pieces.
  3. Parboil the yam cake in hot water to remove bitterness, then julienne into 2 cm (0.8 in.) long strips.
  4. Place (1) and (A) into a rice cooker and then pour in the indicated amount of water for 300 g (10.6 oz.) of rice. Add in (2), (3) and the ground chicken, cook the rice as usual and then scoop into bowls.
  5. Mix (B) together in a pot, warm, pour onto (4) and then garnish with the grated ginger.

  1. 1Place a smaller sized colander into a bowl and add in the rice.

  1. 2 Pour in some water and lightly mix and moisten the rice with your hands, then drain the rice and throw away the water.

  1. 3Make a claw with your hand and use this to stir the rice in a circular motion about 20 times.

  1. 4Pour in water, rinse and then throw away the starchy water.

  1. 5Repeat steps (4) several times until the water becomes less starchy and almost clear.

  1. 6Place the washed rice into a pot, add in the specified amount of water and then set aside for 30 minutes.

  1. 7Place the pot over medium heat uncovered. Once fully boiling, cover with a lid and cook for 15 minutes over very low heat.

  1. 8Turn off the heat and leave to steam for 15 minutes. Once cooked, lightly toss the rice with a rice paddle or wooden spoon.
Burdock root - peeling

Since the flavor of this root vegetable is located between the skin and the root itself, peel off the skin as thinly as possible. For recently picked and fresh roots in soil, a quick scrub with a natural bristle scrubber or vegetable brush is sufficient. For older roots that have become hard, scrape with the back of a kitchen knife to remove the skin. Burdock root has a high lye content. Cut and soak in water for about 5 to 10 minutes to remove excess lye. However if soaked for too long or if the water is replaced, the flavor also will seep out.

Burdock root - shavings

Scrape off the skin, lay a kitchen knife against the burdock root in a manner to start shaving off from the end and then proceed to shave off thin pieces. Have a bowl full of cold water ready to directly catch the burdock root shavings.

Yam cake - rubbing with salt

Rub yam cake with salt to remove its distinct odor. Use about 1 Tbsp of salt for 1 large yam cake. Rinse quickly and wipe dry before using.

Yam cake - parboiling

If you quickly place the yam cake into boiling water (parboil) the distinct odor of the yam cake will be removed, flavor and seasonings will be soaked up easier, and the rubbery texture will be refreshed. The appropriate boiling time is for 2 to 3 minutes in water that is at a rolling boil. Avoid over-boiling as this will result in hard yam cake.
